Chef Erik’s ‘Inside Out Stuffed Peppers’

Ingredients:

  • 2 lbs ground beef

  • 1 white onion, chopped

  • 2 green bell peppers, chopped

  • 1 cup rice

  • 28 oz can crushed tomatoes

  • 10.75 oz can tomato soup

  • 1 T worchestershire sauce

  • 1 t garlic powder

  • 1 t onion powder

  • 1 t all purpose seasoning

  • 1 tsp black pepper

Preparation:

  • Preheat oven to 350 degrees Fahrenheit.

  • Brown ground beef in dutch oven. Drain grease.

  • Add onion and bell pepper and cook to soften (about 7-8 minutes).

  • Add worchestershire sauce and seasonings. Stir to combine.

  • Add tomatoes and soup. Stir to combine.

  • Add rice (washed vigorously for five minutes with cold water.)

  • Bake for one hour (or until internal temperature of casserole reaches 165 degrees Fahrenheit.

  • Adjust seasoning and serve.
